* Place 2-3 ounces of Real Phat Original Crackers in a food processor and pulse until crackers are completely crumbled
In a large bowl, mix together cracker crumbs, salmon, peppers, chives, sweetener, lime, cilantro, and everything spice.
In a separate bowl, whisk egg, mayo, and Pure Fire Tonic
Stir wet mixture into the salmon mixture until fully incorporated
Heat oil in skillet over medium high heat and portion salmon mixture in to desired sized croquettes. Once oil is hot, fry each croquette about 3-4 minutes per side until golden brown.
** Serve as is or with fire aioli to dip.
* If you don't have access to a food processor, you can place whole crackers in a large ziploc bag, squeezing out as much air as possible and roll with a rolling pin or glass until completely crumbled.
** To make fire aioli, combine 1/4 c. mayo with the juice of 1/2 lime and 2 tbsp Pure Fire Nectar Tonic.
