Cranberry Pecan Stuffing

Ingredients

  • 1 Loaf Real Phat Foods Grain Free Bread, cubed

  • 2 tbsp butter or fat of choice

  • 1/4 onion diced

  • 2 stalks celery diced

  • 1 cup fresh cranberries

  • 1 cup raw pecans

  • 1 cup chicken or vegetable broth

  • 2 eggs

  • 1/4 cup sweetener

  • salt, pepper & sage to taste

Directions

  1. While oven is preheating to 350, place bread cubes on tray in the oven to toast, approximately 10-12 minutes.

  2. While bread is toasting, sauté diced onions and celery in butter/fat of choice in a skillet over medium high heat until just browned.

  3. Remove bread cubes from oven and veggies from stove. Add toasted bread cubes, sautéed vegetables, fresh cranberries and pecans to large bowl and fold to mix.

  4. In a separate bowl, mix eggs, broth, golden sweetener, and seasonings.

  5. Place bread mixture in a greased casserole dish* and slowly pour egg mixture over bread mixture.

  6. Bake at 350 covered for 30 minutes and uncovered 30 additional minutes. Enjoy!
