Fall weather is here and soup season is upon us. Here is my all time favorite soup recipe. Don't let the creamy deliciousness fool you, it's low-carb, grain-free, gluten-free, and perfect if you're on the keto diet or just looking for a quick, healthy soup alternative. What better way to warm up than a bowl of this goodness?
Creamy & Delicious Chicken Popper Soup
1 bag Original Phat Crackers
1 head cauliflower (chopped)
1 lb cooked chicken
1 lb bacon
8 oz cream cheese
1/4 cup butter
16 oz shredded cheese
2 cups heavy whipping cream
32 oz chicken broth
Salt, garlic & onion powder to taste
Dice the onion and jalapeños, sauté in pot with the butter.
Add in cream cheese, keep heat on low, mix all together, let melt.
Add in 16 oz shredded cheese. Mix together continuously, then add in the heavy cream and the broth.
Add in cauliflower then close the lid for about 35 minutes for the cauliflower to soften, stir.
Add the cooked chicken and season with salt, onion powder, and garlic powder to taste
Top with bacon, cheese, green onion and crumbled Phat Crackers!
