Low Carb Beer Cheese Dip
1 tsp xanthan gum
1/4 cup butter
1 clove minced garlic
1 cup beer (we recommend an IPA or Ale)*
1/2 heavy whipping cream
2 tsp dijon mustard
2 cups freshly shredded cheese (we used 1/2 sharp cheddar and 1/2 gruyere) **

Melt butter in a medium-sized skillet or sauce pan on medium heat.
Sprinkle 1/2 tsp xanthan gum into butter while whisking and then repeat with the second 1/2 tsp and whisk in for 30 seconds (sprinkle while blending is the key).
Add minced garlic to the roux and brown for approximately 1 minute.
Add your beer and heavy whipping cream and whisk together. Add mustard and stir to combine. Let simmer for 2-3 minutes while continuously whisking.
Stir in freshly grated cheese and stir continuously until cheese is fully melted and dip is thoroughly combined. Let sit for 3-5 minutes to continue to thicken.
